Can technicians record parts from the job site?

Technicians on the Enterprise plan can work from their assigned jobs on a phone, including job notes and photos. Mobile workforce access is an Enterprise-plan capability.

How does an emergency call get onto the day?

You put it there. The board shows the day and who is committed to what, so a dispatcher can see the cost of interrupting each technician and decide who goes — which is the judgement call an algorithm does not have the context to make.
